Wine Profile
Tasting Notes
The 2021 Keller Estate Oro de Plata Chardonnay has aromas of lychee and just ripe pineapple, followed by floral notes of white petals. In the mouth, the wine has an apple or pear skin flavor paired with a palate-cleansing astringency which gives the wine length and dimension. There are notes of tres leches cake and waffle cone. This wine is lively in the mouth and full of fruit flavor. Without oak contact, the true essence of the Chardonnay grape varietal is delivered here.
Winemaker Notes
The backbone of this wine is the Wente clone, known for its distinctive aromatics. The fruit was harvested at 24 Brix from the 9th through the 21st of September. We use a gentle press cycle and settle our juice in tank before inoculating it with yeast. This contrasts with our Burgundian-style La Cruz Chardonnay made from native yeast. Oro de Plata differs from our Burgundian Chardonnay in that it is fermented and aged in a stainless-steel tank. We fluff the lees up during aging to impart some mouthfeel and texture to the wine. It does not go through malolactic fermentation, so it retains the malic acid of the grape imparting a distinctive flavor and keeping the acidity slightly higher than its Burgundian counterpart. This wine was aged for 5 months.
