This classic, velvety side is perfect for soaking up the rich flavors of the short ribs and the Syrah’s earthy notes.
Ingredients
  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 4 cloves garlic, peeled and halved
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 4 tbsps unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Chopped chives or parsley (optional, for garnish)
Directions

1. Boil the Potatoes and Garlic: In a large pot, add potatoes and garlic. Cover with water, add a pinch of salt, and bring to a boil. Cook until potatoes are tender, about 15 minutes. Drain well.

2. Mash and Mix: Return potatoes and garlic to the pot. Add cream and butter, mashing until smooth and creamy. Season with salt and pepper to taste.

3. Serve: Garnish with chopped chives or parsley, if desired.
